This is because of jet streams that are high up in the atmosphere. Jet streams always travel from west to east so when a plane gets into a stream it travels easier and faster.

A plane appears to fly faster from west to east and slower from east to west due to the Earth’s rotation. The Earth rotates from west to east, causing the atmosphere to move along with it. When flying from west to east, the plane is essentially riding the tailwind created by the Earth’s rotation, which helps to increase its speed. Conversely, when flying from east to west, the plane is flying against the prevailing winds, resulting in a slower ground speed.
